ITALIAN CHICKEN & MUSHROOM CASSEROLE... a fabulous mushroom chicken recipe to experiment with!
* 4 full chicken breasts, cut in fifty percent * one/4 c. oil * three/4 c. onion, chopped * one clove garlic, minced * 2 tbsp. cornstarch * one/2 c. dry white colored wine * one lg. can full tomatoes & liquid * one one/2 tsp. salt * one bay leaf * one/2 tsp. marjoram leaves * one/three tsp. pepper * one/three tsp. crushed thyme leaves * 4 med. zucchini (sliced one/2" thick) * one lb. new mushrooms
INSTRUCTIONSSeason chicken breasts with salt and pepper to taste. Heat oil in sizable skillet. Brown chicken on both equally sides. Go over and cook on lower warmth for 15-20 minutes. Eradicate chicken to sizable baking dish. Pour off all but 2 tablespoons drippings. To drippings include onion and garlic.Saute until finally tender.Moyen cornstarch with one/4 cup of wine. Stir into skillet. Include tomatoes and liquid. Cook and stir until finally thick, about one-2 minutes. Stir in salt, bay leaf, pepper, thyme and crushed marjoram. Addzucchini. Provide to a boil. Go over and simmer three minutes. Pour in excess of chicken. Go over and bake at 350 degrees for 20 minutes.Meanwhile, rinse, pat dry and slice mushrooms. Include mushrooms andremaining wine to casserole. Baste with sizzling liquid, cover and bake until finally chicken is fork tender, about 20 minutes. Juice may likely be thickened if you desire.
